How to make currant jam
Homemade preparations are still in high esteem not only among summer residents and gardeners, but also among 100% urban residents, who go to the market for ripe and juicy currants during the berry season. Currant jam is a tasty and healthy delicacy, a storehouse of vitamins and minerals. Always such jam is equally loved by adults and children, family tea parties are arranged with it, used as an excellent addition to cheese cakes, cottage cheese casserole or porridge. Grain bread toast with currant jam and a slice of goat cheese is a dietary and gourmet breakfast.
Black currant jam, recipe number 1

Ingredients:
Black currant - 1 kg.
- Sugar - 1.5 kg.
- Water - 2 tbsp.
Sort out the currants, remove dry and spoiled berries, stalks and leaves, rinse and let the water drain, throwing the berries into a colander. Pour boiling water over the berries, blanch for 4-5 minutes, drain and mix with sugar. Bring to a boil, if there are foreign impurities (usually strings from the bag in which sugar is stored), filter the syrup through folded gauze. Pour berries into boiling syrup, mix and cook until tender, removing the resulting foam. Pour hot jam into sterilized jars, seal.

Ingredients:
Black currant - 1 kg.
- Sugar - 1 kg.
Rinse and lightly dry the sorted currants, cover with sugar and leave for several hours, you can overnight. Bring to a boil, shake and remove the resulting foam, cool. Boil in this way 3-4 times, cooling each time after boiling. Pour the prepared jam hot into prepared jars, seal it tightly and store in a cool place.
Blackcurrant five-minute jam

Ingredients:
Black currant - 2 tbsp.
- Sugar - 3 tbsp.
- Water - 1 tbsp.
Sort out and rinse the currant berries, dry completely. Pour sugar into water, boil syrup and, adding berries, bring to a boil. Stir, reduce heat a little, cook for 10-12 minutes (not five, as the name suggests, but still much faster than ordinary jam), removing the foam. Pour hot jam into jars, seal, turn over the jars, wrap with a warm cloth and cool. It is better to store such jam in the refrigerator or in the cellar.
Red currant jam, recipe number 1

Ingredients:
Red currant - 4 tbsp.
- Sugar - 6 tbsp.
- Water - 1 tbsp.
Prepare the berries - remove the stalks and leaves, sort out the currants, rinse and let dry. Pour sugar into the water, stir and boil the syrup, gradually add the berries, stirring gently. Cook for 30-35 minutes over medium heat, skimming off the resulting foam. For flavor, a teaspoon of vanilla sugar or a few cinnamon sticks is often added to red currant jam. Arrange hot jam in jars, seal tightly.

Ingredients:
Red currant - 4 tbsp.
- Sugar - 2 tbsp.
- Orange - 2 pcs. (optional).
Sort out the currant berries, remove the stalks, rinse and dry, leaving in a colander and shaking occasionally. If oranges are used, wash them, remove skin, bones and films. Grind the currants with a blender or a meat grinder together with orange slices, put in a saucepan with a thick bottom and heat over low heat. Pour sugar in small portions, stirring the berry mass. Bring to a boil, cook for 20 minutes. Place immediately in sterilized jars, close and leave to cool.
