How to cook pickled tomatoes

Pickled tomatoes

Ingredients:
Tomatoes - 3 kg.
- Black pepper - 15 peas
- Bay leaf - 5 pcs.
- Dill - to taste
- Salt - 100 gr.
- Sugar - 150 gr.
- Water - 1.7 liters.
- Vinegar - 50 ml.
Wash the tomatoes thoroughly. At the bottom of the canning jar, put a few peppercorns, bay leaves and put the tomatoes tightly on top. Combine water, salt and vinegar and bring to a boil. Pour boiling brine over tomatoes and cover.
Put the jars in a container for sterilization and boil them for 7-8 minutes. Then close tightly with lids.
Green pickled tomatoes

Ingredients:
Green tomatoes - 5 kg.
- Garlic - 3 heads
- Parsley - 1 bunch
- Bulgarian pepper - 1 kg.
- Carrots - 3 pcs.
- Water - 5 liters.
- Sugar - 2 tbsp.
- Salt - 1 tbsp
- Vinegar - 0.5 l.
- Bay leaf - 15 pcs.
- Black pepper - 15 peas
- Cloves - 6-7 pcs.
Peel the carrots and cut into semicircular slices. Wash the pepper and cut into small pieces. Chop the garlic.
Cut the tomatoes and put some garlic in each cut. Place the tomatoes tightly in jars, sprinkling each layer with carrots and peppers. Top with parsley.
Dissolve salt, sugar, vinegar in water, bring to a boil and pour jars of tomatoes with hot marinade.
Cover the jars with lids and sterilize for 10-12 minutes. Close the lids tightly, allow to cool and store.
Pickled tomatoes by express method

Ingredients:
Tomatoes - 3 pcs.
- Olive oil - 1/3 tbsp
- Vinegar - 1/4 cup
- Salt - 1 tsp
- Pepper - 1 tsp.
- Garlic - 1 clove
- Parsley - 1 tbsp. l.
- Onions - 1/2 pc.
Finely chop the onion and garlic. Cut the tomatoes into 4 pieces. Place the tomatoes in a pickling container. Combine olive oil, garlic, onion, parsley and spices.
Pour the resulting mixture over the tomatoes, cover and refrigerate. Tomatoes will be ready in a day.
Tomatoes marinated with garlic

Ingredients:
Cherry tomatoes - 3 kg.
- Garlic - 1 head
- Celery - 1/2 root
- Parsley - 1 bunch
- Dill - to taste
- Chili pepper - 4 pcs.
- Water - 3 liters.
- Salt - 6 tbsp l.
Wash and dry the tomatoes. Cut the celery into small pieces. Chop the parsley. Cut the chili pepper. Boil water and salt.
Put the tomatoes on the bottom in one layer, put a layer of parsley, garlic and celery, then again the tomatoes and so on until the jar is full.
Pour with a slightly cooled marinade, close the lid.
Tomatoes marinated with onions

Ingredients:
Tomatoes - 2 kg.
- Onions - 200 gr.
- Salt - 50 gr.
- Honey - 100 gr.
- Vinegar - 50 gr.
- Parsley - to taste
Cut the onion into thin rings. Wash the tomatoes, prick with a fork in the area of the stalk. Put the tomatoes in pasteurized jars, sprinkling them with onions.
Prepare the marinade by boiling water with salt, honey and vinegar. Pour the tomatoes with hot marinade, sterilize the jars again and roll up the lids.
