Today you can buy ready-made cakes in stores. But do they compare to homemade baked goods? Of course, everyone has their own recipe for Easter cake: someone loves butter cakes, someone likes candied fruit, raisins, nuts, etc. In addition, the dough feels like the hands and even the mood of the hostess. We will give an example of making a classic Easter cake. Spend a little of your time, your loved ones will like the smell of fresh baked goods, you will immediately feel the holiday atmosphere, which will be diluted with home comfort, warmth, and love.
To prepare a classic Easter cake, we need:
1-1.3 kg flour
- 500 ml milk
- 6 eggs
- 200 g butter or margarine
- 250-300 g sugar
- 11 g dry yeast (or 50-60 g raw)
- 300 g raisins
- 1 tsp vanilla sugar
- 100 g sugar
Exit - 3 Easter cakes 11 cm high and 17 cm wide plus 6 small Easter cakes 7 cm high and 6 cm wide.
So, heat the milk a little so that it becomes slightly warm, dissolve the yeast in it. Add 500 g flour, mix everything well. We put the dough in a warm place or in a bowl of warm water, cover with a towel. The dough should double in size (this will take about 30 minutes). Next, we separate the whites from the yolks. Grind the yolks with regular and vanilla sugar. Beat the whites with salt until foam. Next, add the yolks to the matched brew, mix. Then add softened butter, mix again. We add proteins, mix again. Add the remaining flour, knead the dough. It needs to be kneaded well, it shouldn't stick to your hands and it shouldn't be cool.
Put the dough in a warm place again. We give him a good rise (50-60 minutes). Next, soak the raisins in warm water for 10-15 minutes, then drain the water. Add raisins to the dough that has come up, stir and put again in a warm place. The dough should rise well. Next, grease the mold with oil, spread the dough by 1/3 of the total height of the mold. Cover with a towel and let the dough rise again in shape. We bake at 100 degrees for 10 minutes. Then we add the temperature to 180 degrees, bake until tender. In order not to be mistaken, pierce the cake with a match, if dry, the cake is ready.
For the glaze, beat the egg whites and salt into a foam. Add sugar, beat until firm peaks. Lubricate the hot cakes with icing and sprinkle with whatever you like (nuts, candied fruits, powdered sugar, etc.).
Of course, Easter cottage cheese should also be on the table.
The recipe for Easter cottage cheese below is simple to perform, it will surely surprise you and your loved ones with pleasant taste and tenderness. To prepare curd Easter you will need:
500 grams of cottage cheese;
- 200 grams of butter;
- 200 grams of granulated sugar;
- 100 ml cream;
- 2-3 egg yolks;
- raisins, almonds, candied fruits 1 spoon each;
- vanillin, cardamom to taste.
First, soften the butter, then grind it with sugar.
Add the yolks to the mass one by one. Sugar grains should disappear in the mixture, for this you need to grind it thoroughly. Add vanillin, cardamom, spices - to taste. Wipe the cottage cheese through a sieve 2 times, mix with the egg-oil part. Stir gently, add nuts, candied fruits, raisins. Whip the cream, add it to the rest of the mixture, after that we shift the cottage cheese Easter into a mold, put it under pressure, and leave it in the cold overnight.
