Cut the courgettes into thin slices. In a bowl, combine olive oil and lemon juice, season with salt and pepper. Place the zucchini in the dressing for 10 minutes.

While marinating the zucchini, coarsely chop the feta, chop the olives. Put marinated zucchini, cheese, and olives into a plate. Drizzle with the remaining dressing, sprinkle with nuts and parsley.
