Grana Padano cheese is a group of cheeses, the distinctive feature of which is its appearance and geographical origin. Grana Padano (Italian Grana Padano, from the words grana - "grain", alludes to the grainy structure of the cheese, and Padano, comes from the Po River) is a popular hard Italian cheese.
The first recipes for the preparation of this cheese appeared in ancient Rome. The name of the cheeses is associated with the Po River, which flows through Italy.
In 1954, the consortium Consorzio per la Tutela Del Formaggio Grana Padano was founded, uniting many companies producing Grana Padano cheese, whose main function is to control and oversee the quality of cheese. In 1955, the consortium registered the Grana Padano trademark in several European countries.
This type of cheese is distinguished by its granular structure and belongs to hard varieties. Has a salty, piquant taste with a slight nutty flavor. Grana Padano resembles Parmesan, but, unlike it, is produced not only in the Emilia-Romagna region, but also in other regions of Italy: Veneto, Trentino - Alto Adige, Piedmont and Lombardy (calorizer). Another difference between this cheese and Parmesan is in the raw materials for its production (for the production of Parmesan, the milk of cows is used, which were fed only with grass and hay; for Gran Padano, the requirements are not so strict).
Grana Padano production technology is based on cow's milk. The cheese ripens for about 18 months. To produce 1 kg of cheese, 17 liters of milk are required. Grana Padano cheese ripens slowly, up to 18 months. Grana Padano is produced all year round, so the quality may vary slightly depending on the laying period.
The cheese heads are cylindrical, 35-45 cm in diameter, 15-18 cm high. The weight of the heads is from 24 to 40 kg. The crust is thin, white or slightly yellow.
Grana Padano cheese has gained popularity and recognition of gourmets and cheese lovers around the world. It has unique taste and aroma properties, consumer characteristics.
