When the tax collectors came, the cow owners deliberately did not milk the cows to the end in order to pay a lower tax. After the tax collector left, the milking process resumed, and it was this secondary milk that became an excellent raw material for making Reblochon cheese (calorizer). The name of the cheese also comes from this legend: the word Re-blocher in French means “second milking”.
