Ingredients
- 12 oz fully cooked chicken sausage (smoked or Italian-style), sliced into 1/2-inch coins
- 2 medium bell peppers (any color), cored, seeded, and cut into 1-inch pieces
- 1 medium zucchini (about 7 oz), cut into 1/2-inch half-moons
- 1 small red onion, peeled and sliced into 1/2-inch wedges
- 1 tablespoon olive oil (or avocado oil)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon dried Italian seasoning (or dried oregano or basil)
- 1/4 teaspoon salt, or to taste
- Black pepper, to taste
- Optional: Grape tomatoes (whole or halved), mushrooms (quartered), broccoli florets, or baby spinach
Instructions
- Slice the chicken sausage into 1/2-inch thick coins.
- Chop bell peppers and zucchini into bite-sized pieces (about 1-inch). Slice the red onion into wedges. Prep any additional veggies if using.
- Add all chopped veggies and sausage to a large mixing bowl. Drizzle with olive oil, then sprinkle on garlic powder, smoked paprika, Italian seasoning, salt, and black pepper. Toss until evenly coated.
- Spread the sausage and veggie mixture in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
- Set the air fryer to 400°F. Cook for 6 minutes, shaking the basket halfway through (about 3 minutes in) to flip everything for even browning.
- Check doneness: veggies should be slightly charred at the edges and sausage golden and sizzling. If using raw sausage, cook for 10-12 minutes or until internal temperature reaches 165°F.
- Transfer to a serving dish, sprinkle with extra herbs if desired, and serve hot.
