Description
These oven baked sweet potato fries are golden and crispy on the outside, soft and sweet on the inside, and make the perfect healthy snack or side. With a simple cornstarch trick and pantry staples, you’ll get irresistibly crunchy fries every time—no deep fryer needed.
Ingredients
- 2 large sweet potatoes (about 1.5 lbs), peeled or unpeeled, cut into 1/4-inch sticks
- 2 tablespoons cornstarch
- 2 tablespoons olive oil
- 1 teaspoon sea salt, plus more to taste
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- 1/2 teaspoon garlic powder (optional)
- Fresh chopped parsley or cilantro, for serving (optional)
- Crumbled feta or cotija cheese, for serving (optional)
- Homemade aioli, Greek yogurt dip, or ketchup, for serving (optional)
Instructions
- Preheat your oven to 425°F (220°C) and place two racks near the center. Let the oven preheat for a full 20 minutes for even heat.
- Wash and dry the sweet potatoes. Peel if desired. Cut into 1/4-inch thick sticks, keeping them as uniform as possible.
- Optional: Soak the cut fries in a bowl of cold water for 30 minutes to 2 hours to draw out excess starch for crispier fries.
- Drain and pat the fries completely dry with a clean towel.
- Add fries to a large bowl. Sprinkle with cornstarch and toss until evenly coated.
- Drizzle in olive oil and toss to coat. Add salt, pepper, smoked paprika, and garlic powder. Toss again until evenly coated.
- Spread fries in a single layer on two parchment-lined baking sheets, leaving space between each fry.
- Bake for 15 minutes.
- Remove trays and flip each fry using tongs or a spatula. Rotate the trays between racks.
- Return to the oven and bake for another 12-18 minutes, until fries are deep golden and crisp at the edges.
- Sprinkle with extra salt or chopped herbs if desired. Serve hot, right off the tray.
Notes
For best results, soak fries in cold water and dry thoroughly before baking. Don’t overcrowd the pan—use two sheets for maximum crispiness. Flip and rotate trays halfway through baking. Customize seasonings to taste, and serve immediately for the crispiest texture. Leftovers can be reheated in the oven or air fryer.
