- 1 large eggplant, sliced into ½ inch rounds
- Salt
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- 2 cups marinara sauce
- 1 cup fresh mozzarella, sliced
- 1 cup grated parmesan cheese
- Olive oil for greasing
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Sprinkle salt on the eggplant slices and let sit for about 10 minutes to draw out bitterness.
- Rinse and dry the eggplant slices.
- Dunk each slice in flour, then beaten eggs, and finally in breadcrumbs.
- Grease a baking pan with olive oil and arrange the breaded eggplant slices in it.
- Bake until golden, about 25 minutes.
- In a baking dish, layer eggplant slices, marinara sauce, mozzarella, and parmesan. Repeat layers until all ingredients are used.
- Bake the layered dish for another 25-30 minutes until bubbling and golden.
- Let sit for a few minutes before serving.
Notes
Use high-quality marinara for the best flavor. You can make this dish ahead of time and bake when ready.
