Ingredients
- 2 large sweet potatoes (about 1.5 lbs), peeled and cut into 1-inch cubes

- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
- 2 tablespoons olive oil
- 1 medium red onion, sliced (optional)
- 1 medium bell pepper, any color, diced
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat oven to 425°F (220°C).
- Peel and cut sweet potatoes into 1-inch cubes.
- Slice smoked sausage into 1/2-inch rounds. Dice bell pepper and slice red onion if using. Mince garlic.
- In a small bowl, whisk together honey, soy sauce, minced garlic, and red pepper flakes (if using). Taste and adjust sweetness if desired.
- In a large mixing bowl, combine sweet potatoes, sausage, bell pepper, and onion. Drizzle with olive oil and pour over the honey garlic sauce. Sprinkle with salt and black pepper.
- Toss everything until well coated.
- Line a large baking sheet with parchment paper (optional for easy cleanup). Spread the mixture in a single layer. Use two pans if needed to avoid overcrowding.
- Roast for 25-30 minutes, flipping and stirring halfway through, until sweet potatoes are fork-tender and sausage is golden.
- Remove from oven and let cool for 2-3 minutes. Garnish with fresh parsley if desired.
