  • 1 can (14.75 oz) creamed corn
  • 1 cup sour cream
  • 1/4 cup honey, plus extra for drizzling
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper (optional)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch or 9×13-inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, whisk together sour cream, melted butter, honey, and eggs until smooth and creamy.
  3. Stir in whole kernel corn and creamed corn. If using, fold in shredded cheddar cheese.
  4. In a separate small bowl, whisk together flour, baking powder, salt, and black pepper.
  5. Add the dry ingredients to the wet mixture and stir just until combined. Do not over-mix.
  6. Pour the batter into the prepared baking dish, using a rubber spatula to scrape the bowl.
  7. Drizzle 2-3 tablespoons of extra honey over the top of the batter.
  8. Bake for 45-55 minutes, until the top is golden and a toothpick inserted near the center comes out clean. If using a smaller, deeper dish, add 5-10 minutes to the baking time.
  9. Let the casserole rest for 10-15 minutes before serving to help it set.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. To make it dairy-free, substitute coconut yogurt and vegan butter. For a firmer casserole, add an extra tablespoon of flour; for a more pudding-like texture, reduce the flour slightly. Letting the casserole rest before serving helps it set and makes scooping easier. Leftovers keep well in the fridge for up to 4 days or can be frozen for up to 2 months.
