Description

A quick and nutritious beef and broccoli stir fry served over cauliflower rice, perfect for midweek dinners.


Ingredients

  • 1 lb beef (flank steak or sirloin)
  • 1 large head of broccoli (or 2 if desired)
  • 2 cups fresh or frozen cauliflower rice
  • 2 cloves garlic, minced
  • 1/3 cup soy sauce (or tamari/coconut aminos)
  • 1 tablespoon ginger paste
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • Olive oil for cooking
  • Toasted sesame seeds (optional, for serving)
  • Lime (optional, for serving)

Instructions

  1. Slice the beef thin against the grain.
  2. Mix soy sauce, brown sugar, ginger paste, and sesame oil to create a marinade for the beef.
  3. Let the beef marinate while chopping the broccoli into bite-sized pieces.
  4. Heat a splash of oil in a large pan and sear the marinated beef for about 3 minutes.
  5. Remove the beef and add the broccoli with a splash of water, cover, and steam for 1 minute.
  6. Add the beef back into the pan along with any remaining marinade and stir for an additional 2-3 minutes.
  7. In a separate pan, sauté the cauliflower rice in olive oil for 3-5 minutes until toasty.
  8. Serve the beef and broccoli over the cauliflower rice and enjoy!

Notes

For the perfect dish, slice beef thin, don’t overcook the broccoli, and taste before serving.
