Description
These playful, fluorescent green cupcakes are inspired by Slimer from Ghostbusters and are perfect for Halloween parties, movie nights, or themed birthdays. Soft vanilla cupcakes topped with vibrant green buttercream and silly Slimer faces make them a kid-approved, crowd-pleasing treat.
Ingredients
- 1 ½ cups all-purpose flour, sifted
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs, room temperature
- ½ cup milk (whole milk preferred)

Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners. Let butter and eggs come to room temperature.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, beat softened butter and granulated sugar until pale and fluffy (2-3 minutes).
- Beat in eggs one at a time, then add vanilla extract and mix until combined.
- Add half the flour mixture to the butter mixture and mix on low. Pour in the milk, then add the remaining flour. Mix just until combined.
- Add green food coloring to the batter, mixing gently until you reach a vibrant Slimer green.
- Scoop batter into cupcake liners, filling each about 2/3 full. Bake for 18-22 minutes, until a toothpick comes out clean.
- Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting: Beat butter until smooth. Add powdered sugar in batches, mixing slowly. Add vanilla and 2 tablespoons milk, then whip until light and fluffy. Mix in green gel food coloring until vibrant. Adjust consistency with more milk or sugar as needed.
- Pipe or spread green frosting onto cooled cupcakes in a messy blob. Place candy eyes near the top. Use black decorating gel or chocolate chips for the mouth, and add marshmallows or mini white chocolate chips for teeth if desired. Use toothpicks for details.

For best results, use gel food coloring for vibrant green. Cupcakes can be made gluten-free or dairy-free with substitutions.
